Squid with garlic
There's no need to spend hours making the perfect starter; this spicy seafood dish takes just a few minutes to make and will be gobbled up just as quickly.

Ingredients
Squid with garlic
- 4 100g pieces baby squid
- 1/2 cup extra virgin olive oil
- 1 small red onion, finely chopped
- 2 teaspoon chopped garlic
- 1 large red chilli, chopped
- salt flakes, to taste
- 1 lemon, zested
- 1/2 cup coarsely chopped flat-leaf parsley
- lemon wedges, crusty bread, to serve
Method
Squid with garlic

1Clean squid by pulling carefully below the head and removing the insides and the hard spine. Salt your fingers to help remove the skin. Cut tentacles off below the head and reserve. Cut open the tubes and score with a knife in a diamond pattern. Cut into pieces no more than 5cm long.

2Heat oil in pan, add squid and cook for no more than a minute; add onion and turn squid over. After 1 more minute, add garlic, chilli, salt and lemon zest, and cook for a further minute.

3Remove from heat and stir through parsley; serve immediately with crusty bread to soak up the oil and lemon wedges on the side if desired.
