Sticky pork with brown rice
  • 1 tablespoon hoisin sauce
  • 2 teaspoon soy sauce
  • 2 teaspoon brown sugar
  • 2 teaspoon grated ginger
  • 350 gram pork fillet, trimmed
  • 1 cup brown rice
  • 150 gram snow peas, trimmed, blanched
  • 1 bunch broccolini, trimmed, blanched
  • 1 long red chilli, thinly sliced
  • 1 teaspoon sesame seeds, toasted

Method

    Preheat oven to hot, 200°C.

    In a large bowl, combine hoisin, soy, sugar and ginger; mix well. Add pork fillet, tossing to coat in marinade; chill 30 minutes.

    Meanwhile, cook rice in a medium saucepan of boiling salted water 30-35 minutes, until just tender; drain well.

    While rice is cooking, heat an ovenproof non-stick frying pan on high. Cook drained pork fillet (retain marinade) 4-5 minutes, turning, until sealed. Pour marinade over; simmer a further 1 minute.

    Bake 8-10 minutes, until cooked to taste. Rest, covered, 5 minutes.

    Slice and serve with rice and vegetables. Sprinkle with chilli and sesame seeds.
