Sugar-free strawberry and apple jelly
A sweet sugar-free dessert containing fresh strawberries, and jelly topped with fresh mixed berries ready to serve in less than 20 minutes

Sugar-free strawberry and apple jelly
- 500 gram strawberries, hulled, chopped coarsely
- 1 2/3 cup water
- 1/2 cup apple concentrate
- 6 gelatine leaves (gold strength)
- fresh mixed berries to serve
Method
Sugar-free strawberry and apple jelly

1Put the strawberries, water and apple concentrate into a saucepan and bring to the boil. Simmer for a few minutes then remove from the heat. When cool, blend until smooth then pour the liquid through a fine sieve into a large measuring jug. (You will need 600ml of strawberry mixture for the jelly; top up with water if there is not enough strawberry mixture. Return to the saucepan and warm over a low heat.

2Soak the gelatine leaves in cold water for a few minutes or until soft. Squeeze to remove any excess water.

3Add the softened gelatine to the warm strawberry and stir to combine. Pour into a bowl, cover with plastic wrap and refrigerate for several hours until firm.

4Layer generous spoonfuls of the jelly and mixed berries into six chilled glasses.
Notes
Not suitable to freeze or microwave Apple concentrate is a thick syrup, made by reducing apple juice to a sweet syrup. It gives a lovely aromatic flavour to the strawberry jelly and can also be lightly drizzled over a fruit salad or used to sweeten smoothies. Apple concentrate is available from most health food stores.
