Summer fruit salad mess
- 300 millilitre thickened cream
- 100 gram bought meringue, crumbled
- 1 small fresh mango, finely chopped
- 2 kiwifruit, finely chopped
- 1/4 cup passionfruit pulp
Method
Summer fruit salad mess

1Using an electric mixer, beat cream until soft peaks form. Gently fold in meringue. Stir through half the chopped fruit and 1tbsp passionfruit. Reserve the rest of the fruit.

2Divide half the cream mixture into 6 serving glasses. Top with half the reserved fruit. Layer in remaining cream mixture and remaining reserved fruit. Top with remaining passionfruit. Serve.
Notes
This dessert is best prepared just before serving. 1/4 cup of passionfruit pulp will equate to about 3 passionfruit. Try fresh mixed berries instead of mango, if you like.
