Ingredients
Sweet ricotta bread with fig sauce
- 40 gram butter, chopped
- 4 slices white bread, crust removed, cut into 1 cm cubes
- 1/4 cup caster sugar
- 2/3 cup fig jam
- 180 gram fresh ricotta
- 4 mint sprigs
- 1 tablespoon finely grated lime zest icing sugar, to dust
Method
Sweet ricotta bread with fig sauce

1Heat butter in a large frying pan over moderate heat. Add bread; cook and stir for 2 minutes or until golden. Sprinkle sugar over bread; cook and stir for 2-3 minutes or until caramelized. Remove from heat.

2Place jam and 1/4 cup water in a small saucepan. Cook and stir over low heat for 2 minutes or until jam melts.

3Spoon bread mixture onto serving plates. Top with quenelles of ricotta, mint and zest. Drizzle with fig sauce. Serve dusted with icing sugar.
