Ingredients

Sweet ricotta bread with fig sauce
  • 40 gram butter, chopped
  • 4 slices white bread, crust removed, cut into 1 cm cubes
  • 1/4 cup caster sugar
  • 2/3 cup fig jam
  • 180 gram fresh ricotta
  • 4 mint sprigs
  • 1 tablespoon finely grated lime zest icing sugar, to dust

Method

    Heat butter in a large frying pan over moderate heat. Add bread; cook and stir for 2 minutes or until golden. Sprinkle sugar over bread; cook and stir for 2-3 minutes or until caramelized. Remove from heat.

    Place jam and 1/4 cup water in a small saucepan. Cook and stir over low heat for 2 minutes or until jam melts.

    Spoon bread mixture onto serving plates. Top with quenelles of ricotta, mint and zest. Drizzle with fig sauce. Serve dusted with icing sugar.
