Sweet sultana loaf
- 125 gram butter, chopped
- 3/4 cup caster sugar
- 1/4 teaspoon almond essence
- 2 eggs
- 1 1/2 cup plain flour
- 1/2 teaspoon baking powder
- 1/3 cup milk or buttermilk
- 1 cup sultanas
Method
Sweet sultana loaf

1Preheat oven to 150°C. Lightly grease and flour a 10 x 20cm loaf pan, shaking out excess.

2In a medium bowl, using an electric mixer, beat butter and sugar together until light and creamy. Beat in essence.

3Add eggs, one at a time, beating well after each addition. Sift flour and baking powder together. Fold into creamed mixture alternately with milk until combined. Fold in sultanas.

4Spoon mixture into pan. Bake for 1 hour 20 minutes, or until cooked when tested with a skewer. Cool in pan for 5 minutes before turning onto a wire rack to cool completely. Store in an airtight container.
Notes
This loaf freezes well - either whole or in slices.
