Tabouli couscous and falafel

Ingredients
- 1 1/4 cup couscous
- 1 1/4 cup boiling water
- 1 lemon, zest and juice of
- 3 tomatoes, deseeded, finely chopped
- 1/2 cup parsley, chopped
- 1/4 cup currants
- 1 small red onion, finely chopped
- 225 gram packet falafel
- 125 gram tub hummus
- lebanese bread, to serve
Method

1Place couscous in a large bowl. Pour over combined water, 2 tablespoons lemon juice and 1 tablespoon zest. Cover with plastic wrap. Set aside 5 minutes.

2Fluff couscous with a fork. Stir tomatoes, parsley, currents and onion through. Season to taste.

3Serve falafel with couscous and hummus. Accompany with flat bread.
Notes
You can replace the couscous with cooked quinoa or soaked cracked wheat, if preferred.
