Thai-style fish with coconut sauce

Ingredients
Marinade
- 1/4 cup soy sauce
- 1 tablespoon coriander, chopped, plus extra to serve
- 3 piece ginger, grated
- 1 long red chilli, finely chopped, plus extra to serve
- 1 clove garlic, crushed
Thai-style fish with coconut sauce
- 4 180g white fish fillets
- 1/2 cup coconut milk
- 2 teaspoon brown sugar
- 1 tablespoon lime juice
- steamed broccolini, snow peas, to serve
Method

1Preheat oven to 160°C.

2Place each piece of fish on a 30cm square piece of baking paper.

3To make marinade, combine all the ingredients in a small bowl. Spoon a little over fish, reserving 1 tablespoon.

4Gather corners of paper together, tying with string, to make loose parcels. Place on an oven tray. Bake 12-15 minutes, until fish flakes easily when tested with a fork.

5In a small saucepan, combine coconut milk, sugar and reserved marinade. Stir over low heat until sugar dissolves. Simmer 2 minutes. Stir in juice.

6Serve fish with sauce, and sprinkle with extra chilli and coriander. Accompany with steamed greens.
