Ingredients

Three-cheese filo triangles
  • 150 gram feta cheese, crumbled
  • 1 cup grated tasty cheese
  • 1 cup grated parmesan
  • 1/2 cup roughly chopped parsley
  • 6 green onions, chopped
  • 1 egg
  • 2 garlic cloves, crushed
  • 12 sheets filo pastry

Method

Three-cheese filo triangles

    Preheat oven to hot, 200°C. Lightly grease and line 2 oven trays.

    In a large bowl, combine cheeses, parsley, onion, egg and garlic, and season to taste. Mix well.

    Layer 2 filo sheets, spraying each with oil. Cut into 4 strips, lengthways.

    Place 2 heaped teaspoonfuls of cheese mixture in one corner of each strip. Fold filo over to cover filling, forming a triangle. Continue folding, keeping triangle shape, until the end of the pastry strip.

    Arrange on prepared tray. Spray with oil. Repeat with remaining pastry and filling. Bake for 15-20 minutes, until golden and crisp.
