Tofu with coriander noodles

Ingredients

Tofu with coriander noodles
  • 185 gram rice stick noodles
  • 300 gram firm tofu
  • 1/4 cup green curry paste
  • 2 tablespoon oil
  • 1 cup coconut cream
  • 2 tablespoon grated palm sugar or brown sugar
  • 2 limes, finely grated zest and juice
  • 2 teaspoon fish sauce
  • 100 gram snow peas, trimmed
  • 2 green onions, sliced
  • 1/3杯芫荽叶,加上额外的装饰
  • sliced red chillies, lime wedges, to serve

Method

Tofu with coriander noodles

    Place noodles in a large heatproof bowl. Cover with boiling water and set aside for 10 minutes to soften. Drain well.

    Pat tofu dry with paper towel. Spread curry paste over tofu and slice into batons.

    Heat oil in a frying pan on high. Fry tofu for about 1 minute each side, until golden. Drain on paper towel.

    Add coconut cream, sugar, lime and fish sauce to same pan. Bring to the boil. Simmer for 3-5 minutes, until the sauce thickens slightly. Add snow peas and green onions. Simmer for 1 minute.

    Toss noodles and coriander leaves through sauce until noodles are warm. Divide between bowls and top with tofu slices. Serve with extra coriander leaves, chilli and lime wedges.
