Ingredients
Trout in a parcel with apple stuffing
- 1 apple, peeled, cored, quartered and thinly sliced
- 3 green onions (shallots), julienned
- 1 tablespoon chopped dill
- 2 whole rainbow trout, cleaned
- 20 gram unsalted butter
- 4 thin lemon slices
Method
Trout in a parcel with apple stuffing

1Preheat oven to 200°C.

2Combine apple, green onions and dill in a bowl and season to taste.

3Fold 2 pieces of baking paper (each about 10cm longer than trout) in half lengthways. Place 1 trout on bottom half of each sheet. Fill trout cavities with apple mixture, then add half of butter and 2 lemon slices to each.

4Fold top half of paper over trout, then make small overlapping folds in ends to enclose trout. Use kitchen string to secure paper, if necessary.

5Place parcels on a baking tray and bake for 20-25 minutes (depending on size of fish), until paper is brown and puffed up. Serve trout in parcels.
Notes
For this trout dish, you need an apple that is not too sweet. Choose from jonagold, red delicious, granny smith or braeburn. Trout is cooked if flesh flakes easily when tested with a fork.
