Ingredients

Tuna and cannellini bean salad
  • 2 400g cans cannellini beans, drained, rinsed
  • 425 gram can tuna, drained, flaked
  • 1 small red onion, finely chopped
  • 2 tablespoon extra virgin olive oil
  • 2 tablespoon white wine vinegar
  • 2 tablespoon chopped parsley
  • 1/4 cup (30g) pitted black olives (optional)
  • 100 gram baby rocket

Method

Tuna and cannellini bean salad

    Combine beans, tuna, onion, oil, vinegar, parsley and olives, if using, in a large bowl. Season to taste and toss to coat.

    Pack tuna salad and rocket into separate airtight containers and chill until ready to go. Toss through rocket when ready to eat.
