Tuna, bacon and potato salad

Ingredients
Tuna, bacon and potato salad
- 500 gram baby potatoes
- 4 rashers bacon, rind removed
- 100 gram baby rocket
- 1/4 cup (40g) kalamata olives
- 185 gram can tuna in spring water, drained
Anchovy dressing
- 2 tablespoon extra virgin olive oil
- 1 tablespoon lemon juice
- 2 anchovy fillets, finely chopped
- 1 small garlic clove, crushed
Method
Tuna, bacon and potato salad

1Cook potatoes in a large saucepan of salted water for 10 minutes, until tender. Drain and cut in half.

2Meanwhile, heat a non-stick frying pan on high. Cook bacon for 2 minutes each side, until crisp. Drain on paper towel. Tear into pieces.

3Combine potatoes, bacon, rocket, olives and tuna in a serving bowl. Drizzle over anchovy dressing (method below), toss and serve.
Anchovy dressing

4Combine all ingredients and season.
Notes
In place of anchovies, you can flavour the dressing with a teaspoon of finely grated lemon rind instead.
