Ingredients
Tuna, rice and zucchini patties
- 600 gram kumara, peeled, chopped
- 100 gram cream cheese, at room temperature
- 250 gram packet microwave brown rice

- 3 eggs, lightly whisked
- 1 cup packaged dried breadcrumbs
- 2 tablespoon vegetable oil
- 4 small frozen corn cobs

Method
Tuna, rice and zucchini patties

1Place kumara in a saucepan; cover with cold water. Bring to the boil. Boil for 15 minutes or until tender. Drain; return to pan. Place over low heat. Add cream cheese; mash until almost smooth. Season. Keep warm.

2Meanwhile, heat rice as packet directs. Transfer to a heatproof bowl. Cool slightly. Add tuna, zucchini, egg and breadcrumbs; stir until combined. Season.

3Heat oil in a frying pan over moderate heat. Drop 2 tablespoon measures of mixture into pan. Cook patties, in batches, for 2 minutes each side or until browned and cooked.

4Place corn in a microwave-safe bowl. Microwave on High (100%) for 3 minutes or until heated. Divide mash, corn and patties among serving plates. Serve with salad and lemon wedges.
