Ingredients

Vegetarian rice hot pot
  • 2 tablespoon olive oil
  • 300 gram packet vegetarian mince
  • 500 gram packet frozen pea, corn and capsicum mix
  • 250 gram packet steamed brown rice
  • 1/2 cup (125ml) vegetable stock
  • 1/2 cup (40g) grated parmesan, plus extra to serve
  • 1/4 cup chopped parsley
  • green salad, to serve (optional)

Method

Vegetarian rice hot pot
  • 1
    Heat oil in a wok on high. Stir-fry mince for 2 minutes. Add vegies and rice and cook for 3 minutes, until heated through.

    Stir in stock and cook for 2 minutes. Fold through parmesan and parsley and season to taste.

    Ladle generously into bowls and top with extra grated parmesan. Serve hot pot with green salad, if you like.
