Ingredients
Vegetarian rice hot pot
- 2 tablespoon olive oil
- 300 gram packet vegetarian mince
- 500 gram packet frozen pea, corn and capsicum mix
- 250 gram packet steamed brown rice
- 1/2 cup (125ml) vegetable stock
- 1/2 cup (40g) grated parmesan, plus extra to serve
- 1/4 cup chopped parsley
- green salad, to serve (optional)
Method
Vegetarian rice hot pot

1Heat oil in a wok on high. Stir-fry mince for 2 minutes. Add vegies and rice and cook for 3 minutes, until heated through.

2Stir in stock and cook for 2 minutes. Fold through parmesan and parsley and season to taste.

3Ladle generously into bowls and top with extra grated parmesan. Serve hot pot with green salad, if you like.
