Ingredients
Warm salami and tomato pasta salad
- 375 gram orecchiette pasta
- 200 gram hot salami, thinly sliced
- 1/3 cup (60g) pine nuts, roasted, chopped coarsely
- 250 gram cherry tomatoes
- 250 gram grape tomatoes, halved
- 1/3 cup fresh flat-leaf parsley leaves
- 1/3 cup fresh basil leaves, torn
- 1/4 cup (20g) pecorino, shaved
Red wine vinegar dressing
- 1/3 cup (80ml) olive oil
- 1/4 cup (60ml) red wine vinegar
- 2 clove garlic, crushed
Method
Warm salami and tomato pasta salad

1In a large saucepan of salted, boiling water, cook pasta according to packet instructions; drain. Rinse under cold water; drain.

2In large frying pan, cook salami, stirring, on medium heat for about 5 minutes, or until crisp; drain on paper towel.

3Meanwhile, to make red wine vinegar dressing.: combine ingredients in a screw-top jar; shake well.

4In a large bowl, place pasta, dressing and salami with nuts, tomato, herbs and cheese; toss gently to combine. Serve.
Notes
Not suitable to freeze. Not suitable to microwave.
