Ingredients
White bean, grapefruit and herb salad
- 2 ruby red grapefruits
- 2 teaspoon olive oil
- 1 tablespoon white wine vinegar
- 420 gram can butter beans, rinsed, drained
- 8 fresh dates, seeded, coarsely, chopped
- 50 gram baby spinach leaves
- 1 cup firmly packed fresh mint leaves
- 1 cup firmly packed fresh coriander leaves
Method
White bean, grapefruit and herb salad

1Segment grapefruits over small bowl; reserve ¼ cup juice.

2In a large bowl, whisk reserved juice with oil and vinegar. Season to taste.

3Add grapefruit and remaining ingredients to dressing in bowl; toss gently.
Notes
We used butter beans for this recipe, but you can use any white beans.
