Ingredients

White bean, grapefruit and herb salad
  • 2 ruby red grapefruits
  • 2 teaspoon olive oil
  • 1 tablespoon white wine vinegar
  • 420 gram can butter beans, rinsed, drained
  • 8 fresh dates, seeded, coarsely, chopped
  • 50 gram baby spinach leaves
  • 1 cup firmly packed fresh mint leaves
  • 1 cup firmly packed fresh coriander leaves

Method

    Segment grapefruits over small bowl; reserve ¼ cup juice.

    In a large bowl, whisk reserved juice with oil and vinegar. Season to taste.

    Add grapefruit and remaining ingredients to dressing in bowl; toss gently.

Notes

We used butter beans for this recipe, but you can use any white beans.
