Easy zucchini, bacon and cheese bake

Light, cheesy and packed full of flavour, this tasty zucchini bake recipe is surprisingly filling and delicious enjoyed hot or cold. Enjoy for dinner, plus any leftovers go great in school lunchboxes

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, peeled and finely diced
  • 2 rashers bacon, finely chopped
  • 5 cup grated courgette (about 4 medium courgettes)
  • 1/2 cup tasty cheese
  • 3/4 cup self-raising flour
  • 4 eggs
  • 1/2 cup plain flour
  • salt and freshly ground black pepper

Method

    Preheat the oven to 175ºC and line a 26cm x 17cm baking dish. In small frying pan, heat the olive oil and sauté the onion and bacon until the onion is golden and the bacon is crispy.

    Squeeze out any excess moisture from the grated courgettes. In a large bowl, combine the grated courgettes, tasty cheese and flour.

    Combine the bacon mixture and the egg mixture with the courgettes and mix together well.

    Spoon into the baking dish and bake in the preheated oven for 20-25 minutes until golden and set. Set aside to cool for 10 minutes before cutting.
