Baked bean croque madame with fries
Packed full of oozy, melted cheese, crispy ham and hearty baked beans, these tasty grilled sandwiches are perfect for a late breakfast or brunch. Topped with a runny poached egg, they are packed full of goodness to keep you fueled for the day.

Ingredients
Baked bean croque madame with fries
- 500 gram frozen oven-bake french fries
- 4 eggs
- 8 thick slices white bread
- 8 slices swiss cheese
- 220 gram can baked beans, in tomato sauce
- 4 slices ham
- 1 tablespoon vegetable or olive oil
- 20 gram butter
- mixed salad, to serve
Method
Baked bean croque madame with fries

1Preheat oven to 230°C (210°C fan forced). Place fries in a single layer on a large non-stick baking tray. Bake 18-20 minutes, or until golden brown, turning fries once during cooking.

2Meanwhile, pour water in a medium saucepan until two-thirds full. Bring to the boil. Reduce heat to moderately low. Break 1 egg into a small bowl. Stir water to form a whirlpool. Gently slide egg into water. Cook, without stirring, 1 minute. Using a slotted spoon, transfer egg to a plate. Repeat with remaining eggs.

3Preheat an oven-grill to high. Line grill tray with foil. Assemble 4 pieces bread on tray. Top 1 piece with a slice of cheese, then a slice of ham and 1/4 of the baked beans. Top each with 1 extra piece of bread; add slice of cheese on top.

4Carefully slide sandwiches into grill. Grill 1-2 minutes, or until cheese has melted. Top each sandwich with an egg. Sprinkle with pepper. Serve with fries and salad.
Notes
Try using cheddar cheese or smoked cheese. Recipe is best made just before serving.
