Ingredients
Baked spiced salmon
- 2 clove garlic
- 2 teaspoon lime juice
- 1 teaspoon black mustard seeds
- 1 teaspoon cumin seeds
- 1/2 teaspoon chilli flakes
- 1/2 teaspoon black peppercorns
- 1/2 teaspoon turmeric
- 4 salmon cutlets
- 4 roma tomatoes, sliced
- 1/4 cup olive oil
- 1 cup fresh coriander leaves
- steamed rice, lime wedges, to serve
Method
Baked spiced salmon

1Preheat oven to hot, 200°C. Line an oven tray with baking paper.

2In a mortar and pestle, pound garlic, juice, mustard seeds, cumin, chilli flakes, peppercorns, turmeric and a pinch of salt to a rough paste. Spread mixture over each cutlet.

3Arrange tomatoes on tray. Drizzle with half oil and season to taste. Bake, 5 minutes.

4Sprinkle tomatoes with half coriander leaves. Top with salmon cutlets. Drizzle with remaining oil. Bake, further 8-10 minutes, until salmon is cooked to taste.

5Top with remaining coriander leaves. Serve with steamed rice and lime wedges, if you like.
