Ingredients

Baked spiced salmon
  • 2 clove garlic
  • 2 teaspoon lime juice
  • 1 teaspoon black mustard seeds
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon chilli flakes
  • 1/2 teaspoon black peppercorns
  • 1/2 teaspoon turmeric
  • 4 salmon cutlets
  • 4 roma tomatoes, sliced
  • 1/4 cup olive oil
  • 1 cup fresh coriander leaves
  • steamed rice, lime wedges, to serve

Method

Baked spiced salmon

    Preheat oven to hot, 200°C. Line an oven tray with baking paper.

    In a mortar and pestle, pound garlic, juice, mustard seeds, cumin, chilli flakes, peppercorns, turmeric and a pinch of salt to a rough paste. Spread mixture over each cutlet.

    Arrange tomatoes on tray. Drizzle with half oil and season to taste. Bake, 5 minutes.

    Sprinkle tomatoes with half coriander leaves. Top with salmon cutlets. Drizzle with remaining oil. Bake, further 8-10 minutes, until salmon is cooked to taste.

    Top with remaining coriander leaves. Serve with steamed rice and lime wedges, if you like.
