Ingredients
Beef, cauliflower and bean curry
- 1 tablespoon olive oil
- 500 gram minced beef
- 1 brown onion (150g), chopped coarsely
- 1 clove garlic, crushed
- 1 fresh long red chilli, chopped finely
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground fennel
- 400 gram canned crushed tomatoes
- 2 tablespoon tomato paste
- 1 2/3 cup (400ml) coconut cream
- 315 gram cauliflower, cut into florets
- 155 gram green beans, chopped coarsely
- 1/4 cup coarsely chopped fresh mint
Method
Beef, cauliflower and bean curry

1Heat half the oil in large saucepan, add beef; cook, stirring, until browned. Remove from pan.

2Heat remaining oil in same pan, add onion, garlic and chilli; cook, stirring, until onion softens. Stir in spices; cook, 2 minutes. Return beef to pan with undrained tomatoes, paste, coconut cream and cauliflower; bring to the boil. Reduce heat; simmer, uncovered, about 20 minutes or until cauliflower is tender.
