Ceviche spoons

Nothing says summer quite like ceviche - so why not serve it up at your next do? This recipe for ceviche spoons is fresh, tasty and so easy to make (and eat!)

Ingredients

  • 500 gram king fish (or other firm white fish fillets), skin removed, diced
  • 3/4 cup fresh lime juice
  • 2 large tomatoes, seeded, finely diced
  • 1 small avocado, stone removed, peeled, finely diced
  • 1/2 red onion, finely diced
  • 2 tablespoon coriander, finely chopped
  • 2 long green chillies, seeded, finely chopped

Method

    Place the fish and lime juice in a large ceramic bowl and stir to combine. Cover with plastic wrap and chill for 30 minutes. Drain fish, discarding juice.

    Transfer fish to a bowl with tomato, avocado, onion, coriander and chilli. Stir gently to combine. Season to taste.

    Divide mixture evenly between 24 Chinese spoons. Keep filled spoons chilled until ready to serve.

Notes

  • Remove seeds from tomatoes by quartering and scraping out with a teaspoon.
