Gnocchi with spinach and ricotta
Need a filling family meal in a hurry? This simple recipe requires just a handful of ingredients to create a hearty gnocchi bake with spinach and ricotta. Serve with garlic bread

Ingredients
- 350 gram packet store-bought fresh gnocchi
- 350 gram good-quality tomato pasta sauce
- 100 gram baby spinach, roughly chopped
- 250 gram ricotta
- handful of grated parmesan
- salt and freshly ground pepper to taste
Method

1Preheat a grill. Heat a pan of salted water until it is boiling, cook the gnocchi according to the packet instructions and drain.

2Meanwhile, heat the tomato sauce in a pan, add the spinach and stir until the spinach leaves have wilted.

3Place the cooked gnocchi in an ovenproof dish, pour over the tomato and spinach sauce and dot with the ricotta.

4Scatter over the grated parmesan, season to taste with the salt and pepper and place the gnocchi under the preheated grill until it is bubbling and golden. Serve with garlic bread and roasted cauliflower or sautéed vegetables.
