Ingredients
Greek style salad with chickpeas
- 2 cup iceberg lettuce, torn
- 400 gram can chickpeas, drained, rinsed
- 2 tomatoes, cut into wedges
- 1 lebanese cucumber, cut into ribbons
- 125 gram reduced-fat feta, crumbled
- 1/4 cup kalamata olives
- 2 green onions, thinly sliced
- 2 pieces mountain bread, cut into wedges
Dressing
- 1 tablespoon red wine vinegar
- 1 tablespoon extra-virgin olive oil
- 1 green onion, sliced
- 1/2 teaspoon dried oregano
- salt and pepper, to season
Method
Greek style salad with chickpeas

1In a large bowl, combine lettuce, chickpeas, tomato, cucumber, feta, olives and onions. Toss gently.

2Preheat oven to moderate, 180°C. Arrange mountain bread on a tray in a single layer. Place in oven for 4-5 minutes until golden and crisp.

3Drizzle dressing over salad. Serve salad with mountain bread.

4In a jug, whisk together all ingredients. Season.
