Ingredients

Greek style salad with chickpeas
  • 2 cup iceberg lettuce, torn
  • 400 gram can chickpeas, drained, rinsed
  • 2 tomatoes, cut into wedges
  • 1 lebanese cucumber, cut into ribbons
  • 125 gram reduced-fat feta, crumbled
  • 1/4 cup kalamata olives
  • 2 green onions, thinly sliced
  • 2 pieces mountain bread, cut into wedges
Dressing
  • 1 tablespoon red wine vinegar
  • 1 tablespoon extra-virgin olive oil
  • 1 green onion, sliced
  • 1/2 teaspoon dried oregano
  • salt and pepper, to season

Method

Greek style salad with chickpeas

    In a large bowl, combine lettuce, chickpeas, tomato, cucumber, feta, olives and onions. Toss gently.

    Preheat oven to moderate, 180°C. Arrange mountain bread on a tray in a single layer. Place in oven for 4-5 minutes until golden and crisp.

    Drizzle dressing over salad. Serve salad with mountain bread.

    In a jug, whisk together all ingredients. Season.
