Mushroom and haloumi pizza

Ingredients

  • 2 large rectangular pizza bases
  • 1/3 cup pizza sauce (see recipe tip)
  • 2 large Portobello mushrooms, thinly sliced
  • 250 gram ball mozzarella, sliced
  • 250 gram haloumi, thinly sliced
  • 2 spring onions, sliced
  • olive oil, lemon juice to drizzle

Method

    Preheat oven to hot, 200°C. Lightly spray two oven trays with oil.

    Place each base on an oven tray. Spread evenly with pizza sauce.
  • 3
    Arrange mushroom, mozzarella, haloumi and onion evenly over bases, then season.

    Bake for 12-15 minutes until bases are crisp and golden. Drizzle with a little olive oil and lemon juice before serving.

Notes

  • For an easy homemade pizza sauce, process 400g can cherry tomatoes, 2 tablespoons tomato paste, 1 small garlic clove and ½ teaspoon dried oregano or rosemary together. Keep in a sealed container in the fridge. - Use tomato passata instead of pizza sauce, if preferred.
