Mushroom and haloumi pizza
Love haloumi? This 20 minute pizza recipe is irresistible for vegetarians and meat eaters alike! Mushrooms and haloumi come together perfectly to create a simple yet sophisticated weeknight meal

Ingredients
- 2 large rectangular pizza bases
- 1/3 cup pizza sauce (see recipe tip)
- 2 large Portobello mushrooms, thinly sliced
- 250 gram ball mozzarella, sliced
- 250 gram haloumi, thinly sliced
- 2 spring onions, sliced
- olive oil, lemon juice to drizzle
Method

1Preheat oven to hot, 200°C. Lightly spray two oven trays with oil.

2Place each base on an oven tray. Spread evenly with pizza sauce.

3Arrange mushroom, mozzarella, haloumi and onion evenly over bases, then season.

4Bake for 12-15 minutes until bases are crisp and golden. Drizzle with a little olive oil and lemon juice before serving.
Notes
- For an easy homemade pizza sauce, process 400g can cherry tomatoes, 2 tablespoons tomato paste, 1 small garlic clove and ½ teaspoon dried oregano or rosemary together. Keep in a sealed container in the fridge. - Use tomato passata instead of pizza sauce, if preferred.
