Ingredients
Pan-fried salmon with cauliflower mash
- 60 gram butter
- 1 small cauliflower, trimmed, cut into florets
- 4 150g pieces salmon or ocean trout fillet, skin on
- 1/2 cup roasted chopped nuts, such as almonds, hazelnuts, pine nuts and walnuts
- steamed asparagus, to serve
Method
Pan-fried salmon with cauliflower mash

1在一个小平底锅或煎锅融化黄油low heat; cook until light golden brown with a gentle nutty aroma. Set aside.

2Cook cauliflower in a saucepan of boiling salted water 6 minutes, covered, until tender; drain thoroughly.

3Puree cauliflower using a food processor or hand blender until smooth and creamy. Add half of browned butter; season well. Cover; set aside, keeping warm.

4Heat a non-stick frying pan on medium. Cook salmon, skin side down, 4 minutes; turn and cook another 1 minute, until opaque but still a little pink in centre.

5Top cauliflower mash with salmon; drizzle over remaining butter. Scatter with nuts; serve with steamed asparagus.
