Ingredients
Prawn and green onion patties
- 330 gram fresh uncooked prawn meat, thinly sliced
- 4 green onions, thinly sliced, plus 2 extra, to serve
- 4 eggs, lightly whisked
- 1/2 cup self-raising flour
- 2 teaspoon sesame oil, plus 1 tsp extra, to serve
- 225 gram packet fresh coleslaw vegetable mix
- 2 tablespoon salt-reduced soy sauce
- 1/2 cup mayonnaise
- 2 tablespoon sesame seeds, toasted
- vegetable oil, for shallow-frying
Method
Prawn and green onion patties

1Place prawn, onion, egg, flour and sesame oil in a medium bowl; stir until well combined. Season.

2Combine coleslaw mix, soy sauce, mayonnaise, sesame seeds and extra sesame oil in a medium bowl; toss to combine. Set aside.

3Heat oil in a large, deep frying pan over moderate heat (oil is ready when a cube of bread crisps quickly without absorbing oil).

4Place 1/4 cups of mixture into frying pan; cook, in batches, 5 minutes each side, or until golden brown and cooked. Serve warm with salad and extra onion.
Notes
To shallow-fry, pour oil into a frying pan to 2cm deep. You'll find packaged coleslaw mix available from the fresh food section of supermarkets. You can buy fresh uncooked prawn meat from the seafood counter of supermarkets.
