Ingredients

Prawn, cucumber and mint salad
  • 750 gram cooked prawns, peeled, deveined, tails intact
  • 1 telegraph cucumber, halved lengthways, sliced
  • 3/4 cup mint leaves
  • 1 cup (40g) alfalfa sprouts
  • 1 oak leaf lettuce, leaves torn
  • 1/3 cup (80ml) buttermilk
  • 2 tablespoon lemon juice

Method

Prawn, cucumber and mint salad

    Combine prawns, cucumber, mint, alfalfa and lettuce in a shallow bowl.

    Combine buttermilk and lemon juice in a small jug and season to taste. Drizzle salad with dressing and serve.
