Ingredients
Prawn, cucumber and mint salad
- 750 gram cooked prawns, peeled, deveined, tails intact
- 1 telegraph cucumber, halved lengthways, sliced
- 3/4 cup mint leaves
- 1 cup (40g) alfalfa sprouts
- 1 oak leaf lettuce, leaves torn
- 1/3 cup (80ml) buttermilk
- 2 tablespoon lemon juice
Method
Prawn, cucumber and mint salad

1Combine prawns, cucumber, mint, alfalfa and lettuce in a shallow bowl.

2Combine buttermilk and lemon juice in a small jug and season to taste. Drizzle salad with dressing and serve.
