Red cabbage winter slaw with orange dressing and salted seeds

Eating your veges is easy when it's chilly with this red cabbage winter slaw recipe. Drizzled in an orange dressing and sprinkled with crunchy seeds, this salad is the perfect side dish

Ingredients

Winter slaw
  • 1/2 small red cabbage, sliced
  • 2 radishes, sliced
  • 2 celery stalks, sliced
  • 1 carrot, julienned
  • 1 spring onion, sliced
  • 1/4 cup Italian parsley leaves
Orange dressing
  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1/4 cup orange juice
  • 2 tablespoon honey
  • sea salt and and freshly ground black pepper to taste
Salted seeds
  • 1 tablespoon oil
  • 3/4 cup mixed nuts or seeds, eg, pumpkin seeds, sunflower seeds, almonds, cashews, linseeds
  • 1/2 teaspoon sea salt

Method

    To make the slaw, combine the sliced vegetables and parsley in a large bowl and toss to thoroughly combine.

    To make the dressing, whisk together the olive oil, vinegar, orange juice and honey in a jar or jug and season to taste.

    To make the salted seeds, heat a small frypan and add the oil, seeds, nuts and salt and sauté until the nuts are toasted and crunchy.

    Add the dressing to the slaw and toss well. Serve the slaw with a generous spoonful of salted nuts and seeds.

Notes

  • Serves 4-6 as a side.
