Special fried rice
- cooking oil spray
- 3 eggs, lightly beaten
- 1 tablespoon peanut oil
- 1 brown onion, halved, cut into thin wedges
- 1/2 small red capsicum, finely chopped
- 2 1/2 cup cold, cooked, white long-grain rice
- 1/2 cup cooked, shredded chicken
- 150 gram small, cooked, peeled prawns
- 1 medium carrot, cut into matchsticks
- 2 tablespoon soy sauce
- 1 clove garlic, crushed
- 2 teaspoon grated fresh ginger
- 100 gram snow peas, thinly sliced lengthwise
- 80 gram fresh bean sprouts, rinsed
Method
Special fried rice

1Spray a large wok with oil. Heat over moderate heat. Add egg: tilt to cover base and sides. Cook for 1 minute or until set underneath. Fold in half; cook for 2 minutes. Transfer to a cutting board and slice.

2Add oil to wok; swirl to coat base and side. Stir-fry onion and capsicum for 1 minute. Add rice, chicken, prawns; stir-fry for 2 minutes.

3Add half of the egg, carrot, soy sauce, garlic and ginger; stir-fry for 1 minute more or until hot. Remove from heat; add snow peas and half the sprouts; toss to combine. Serve topped with remaining egg and the sprouts.
Notes
For authenticity, add barbecued pork.
