  • cooking oil spray
  • 3 eggs, lightly beaten
  • 1 tablespoon peanut oil
  • 1 brown onion, halved, cut into thin wedges
  • 1/2 small red capsicum, finely chopped
  • 2 1/2 cup cold, cooked, white long-grain rice
  • 1/2 cup cooked, shredded chicken
  • 150 gram small, cooked, peeled prawns
  • 1 medium carrot, cut into matchsticks
  • 2 tablespoon soy sauce
  • 1 clove garlic, crushed
  • 2 teaspoon grated fresh ginger
  • 100 gram snow peas, thinly sliced lengthwise
  • 80 gram fresh bean sprouts, rinsed

Method

    Spray a large wok with oil. Heat over moderate heat. Add egg: tilt to cover base and sides. Cook for 1 minute or until set underneath. Fold in half; cook for 2 minutes. Transfer to a cutting board and slice.

    Add oil to wok; swirl to coat base and side. Stir-fry onion and capsicum for 1 minute. Add rice, chicken, prawns; stir-fry for 2 minutes.

    Add half of the egg, carrot, soy sauce, garlic and ginger; stir-fry for 1 minute more or until hot. Remove from heat; add snow peas and half the sprouts; toss to combine. Serve topped with remaining egg and the sprouts.

Notes

For authenticity, add barbecued pork.
