Swiss chard omelette
- 1 cup roughly chopped swiss chard, or silverbeet
- 2 tablespoon finely sliced red onion
- 4 eggs, lightly beaten
- 2 tablespoon cream or milk
- 1/4 cup feta, crumbled
- chopped flat-leaf parsley, to serve
Method
Swiss chard omelette

1Preheat oven grill. Heat a little olive oil in a small frying pan and sauté Swiss chard or silverbeet and red onion until wilted.

2Whisk together eggs, cream and a little salt and pepper and pour over greens. Top with feta and cook for 2–3 minutes on a medium heat. Place under grill until golden. Sprinkle with parsley, then serve.
