Ingredients

西红柿米饭
  • 2 tablespoon peanut oil
  • 1 (180g) medium brown onion, finely chopped
  • 2 clove garlic, crushed
  • 3 medium tomatoes, seeded, peeled, finely chopped
  • 2 tablespoon tomato paste
  • 4 clove garlic
  • 2 cup white long grain rice
  • 3 cup cold water
  • fresh coriander leaves, to garnish

Method

    In a medium saucepan, heat oil over medium heat. Add onion, garlic, tomatoes, paste and cloves; cook, uncovered, for about 10 minutes, or until mixture thickens.

    Stir in rice and water; bring to the boil. Reduce heat to low; simmer, covered tightly, for about 15 minutes, or until water is absorbed.

    Remove from heat; stand, covered, for 10 minutes.

    Fluff rice with fork; garnish with coriander. Serve.
