Ingredients
西红柿米饭
- 2 tablespoon peanut oil
- 1 (180g) medium brown onion, finely chopped
- 2 clove garlic, crushed
- 3 medium tomatoes, seeded, peeled, finely chopped
- 2 tablespoon tomato paste
- 4 clove garlic
- 2 cup white long grain rice
- 3 cup cold water
- fresh coriander leaves, to garnish
Method

1In a medium saucepan, heat oil over medium heat. Add onion, garlic, tomatoes, paste and cloves; cook, uncovered, for about 10 minutes, or until mixture thickens.

2Stir in rice and water; bring to the boil. Reduce heat to low; simmer, covered tightly, for about 15 minutes, or until water is absorbed.

3Remove from heat; stand, covered, for 10 minutes.

4Fluff rice with fork; garnish with coriander. Serve.
