Ingredients
Tuna tasters with nam jim
- 3 tablespoon lime juice
- 2 tablespoon coarsely grated palm sugar (or use brown sugar)
- 1 1/2 tablespoon fish sauce
- 2 coriander roots 7-10cm long, scrubbed and coarsely chopped
- 1 teaspoon sea salt
- 2 hot green chillies, finely chopped
- 2 tablespoon finely chopped peeled shallots
- 2 clove garlic, peeled and finely chopped
- 150 gram fresh tuna loin (it must be very fresh)

1Mix lime juice, sugar and fish sauce in a bowl. Crush the coriander roots and salt together with a mortar if you have one, or put them in a spice blender or pound with the end of a rolling pin (cover the end of the pin with plastic first).

2Transfer mixture to the bowl with the lime juice, sugar and fish sauce and add chillies, shallots and garlic. The dipping sauce is ready to use or store as described above.

3Slice tuna very thinly, cut into strips then into tiny dices. Transfer to a container and keep refrigerated until ready to serve (you can do this 3-4 hours before serving).

4To serve, put spoonfuls of tuna on tasting spoons or small scallop shells and drizzle with a little nam jim sauce. Serve immediately.
