Vegetarian fried rice

Using vegetarian chicken-style sausages, this quick, easy and super delicious vegetarian fried rice is loaded with vegetables, topped with crispy fried shallots and subtly spiced.

Ingredients

Vegetarian fried rice
  • 2 eggs, lightly beaten
  • 1 teaspoon peanut oil
  • 2 onions, finely chopped
  • 1 clove garlic, crushed
  • 200 gram green beans, cut into short lengths
  • 1 cup (120g) frozen peas
  • 1 long red chilli, seeded, thinly sliced
  • 300 gram vegetarian chicken-style sausages with lime and ginger, sliced
  • 4 cup cold steamed rice (1 1/2 cups raw)
  • 2 tablespoon light soy sauce
  • 2 tablespoon torn coriander leaves
  • 1 lebanese cucumber, finely diced, to serve
  • crispy fried shallots, to serve

Method

    Lightly spray a large frying pan or wok with cooking oil spray and heat on medium. Add half of the egg and spread out to make a thin omelette. Cook for 1 minute each side, until set. Repeat with remaining egg. Roll up and cut into thin strips.

    Heat oil in same pan on medium. Add onion and garlic and stir-fry for 3 minutes. Add beans, peas and chilli and cook for 3 minutes, until browned. Add sausage and stir-fry for 2-3 minutes.

    Add rice and stir-fry until heated through. Add soy sauce, coriander and omelette strips and toss to combine. Serve topped with cucumber and fried shallots.

Notes

Crispy fried shallots are available in the Asian section of supermarkets.
