Ingredients
Crisp salmon with braised beans
- 2 tablespoon vegetable or olive oil
- 1 medium brown onion, finely chopped
- 2 clove garlic, crushed
- 2 medium tomatoes, quartered
- 2 400g cans diced tomatoes
- 100 gram green beans, trimmed, cut into thirds diagonally
- 1/2 cup loosely packed basil leaves
- 4 160g salmon fillets, skin on, bones removed
- lemon wedges, to serve
Method
Crisp salmon with braised beans

1Heat half the oil in a large frying pan over moderate heat. Add onion and garlic, cook and stir 2-3 minutes, or until soft. Add tomato, simmer 3-4 minutes, or until thickened slightly.

2Stir in beans, simmer 3-4 minutes, or until beans are tender. Remove from heat. Season. Stir in basil.

3Meanwhile, heat remaining oil in a large frying pan over moderate heat. Add salmon, skin-side down. Fry, 4 minutes, or until skin is crisp and lightly golden. Turn, cook, 2-3 minutes for medium, or until cooked to your liking. Remove from heat. Cover with foil and rest, 5 minutes.

4Spoon braised beans onto serving plates. Top with salmon. Serve with lemon wedges, if you like.
