Ingredients

Ham hash
  • 1/4 cup (60ml) extra virgin olive oil
  • 1 large (200g) brown onion, finely chopped
  • 1 clove garlic, crushed
  • 200 gram thickly sliced ham off the bone, roughly chopped
  • 3 medium (600g) desiree potatoes, peeled, roughly chopped
  • 1/4 cup coarsely chopped fresh flat-leaf parsley

Method

    Preheat oven to 180°C (160°C fan-forced).

    Combine oil, onion, garlic and ham in a large baking tray or ovenproof dish. Bake, stirring occasionally, 10 minutes, or until onion is soft and golden.

    Add potatoes, season lightly with sea salt and freshly ground black pepper, stir to combine. Bake further 30 minutes or until potatoes are tender, stirring halfway through cooking.
