Ingredients
Prosciutto-wrapped melon
- 1/2 medium_piece rockmelon (850g)
- 12 slice (180g) prosciutto
Vinaigrette
- 1 tablespoon red wine vinegar
- 1/4 cup (60ml) olive oil
- 1/2 clove garlic, crushed
- 1/4 teaspoon sugar
- 1 teaspoon flat-leaf parsley, fresh, finely chopped
- 1 teaspoon oregano, fresh, finely chopped
Method
Prosciutto-wrapped melon with vinaigrette

1Peel and seed rockmelon; cut into 12 slices. Wrap a slice of prosciutto around each rockmelon slice.

2Combine remaining ingredients in screw- top jar; shake well.

3Drizzle vinaigrette over rockmelon; serve with mesclun, if desired.
